As promised in my last post, here is an adapted version of the easy and delicious bread gratin recipe I brought back from my recent trip to Switzerland’s beautiful Emmental Valley. 



Emmentaler bread gratin with kale and leeks
Serves 4
Here's why I love this recipe. First, it uses the ingredients likely to be found in an Emmental farm kitchen. Second, its easily adaptable (see notes below). Third, its fast, you can do most of the prep in a food processor. Finally, this is serious comfort food and a fabulous way to use stale bread, something I can never bear throwing out.

  1. 250 grams day-old whole grain bread
  2. 100 ml white wine
  3. 4-6 large kale leaves
  4. 1 large leek
  5. 2 shallots
  6. 1 T olive oil
  7. 200 grams grated Emmentaler AOP cheese
  8. 400 ml milk
  9. 4 eggs
  10. 1 T mustard
  1. Preheat the oven to 200 C
  2. Cut the bread into small cubes and
  3. Sprinkle with the wine
  4. Place the kale, leek and shallots together in a food processor and process briefly
  5. Saute in the hot oil for about 3 minutes, season with salt
  6. Spread over the bread and top with the cheese
  7. Whisk the eggs, milk and mustard and pour over the bread mixture.
  8. Bake for about 30 minutes or until set.
  1. The original recipe called for 500 grams of mixed mushrooms, a large bunch of parsley and an onion instead of the kale, leek and shallots. I used dense, homemade rye bread I had on hand instead of the whole wheat bread called for. It was delicious.
  2. You can substitute grated nutmeg for the mustard.
  3. I'm looking forward to trying this with other seasonal vegetables (asparagus, zucchini, chard, broccoli, carrots....)
  4. I divided this recipe between smaller gratin dishes to make individual servings.
  5. Next time, I plan to double the recipe and freeze half unbaked for another meal.
